After implementing insight, it appears that there is no way to specify a default value for an object attribute. For instance, if the attribute is an object reference, like a list of functions or states, I'd like to be able to then select what the default would be when a person creates a new item. Or in another common case, I have a Boolean field that most objects should have selected as NO, but by default, the field is empty. I can require it to be entered, but then it just forces the user to need to select one more thing on the form, when most of the time the default would be good enough.

I fully agree with the first commenter. Why is this not a feature already?
As a workaround - one can configure an Automation rule to run on Object Created, with the Action: Attribute Value - indicating the "default" value to set in the attribute once the object was created.
In the Create screen - the attribute will not show any value pre-populated though...
