This is just a visual regression and there is nothing wrong with the settings.
The bug is fixed in SD 4.0.1.
Summary
In JIRA 8.0/SD 4.0, the Email requests page shows errors for all the settings.
Steps to reproduce
- Install a brand new JIRA 8.0 with SD 4.0
- Go to JIRA Administration -> Applications -> JIRA Service Desk -> Email requests
Expected behavior
There's no error, as it's the case with JIRA 7.13.1 with SD 3.16.1:

The page shows errors for all the settings:
