The backup currently includes the entire site data and an Excel/CSV backup on daily basis can help the user retrieve any basic information in case of minute accidental change.
Workaround
You can reference to this community article: How to export all issues from Jira via AP in which a CSV is export is done programatically using a Python library. This script can be scheduled and modified to even save the generated CSV to a local or a cloud storage.
