The Self Hosted Guide for EI that is present on the Help notes the following:

Microsoft SQL Server 2019 or newer is required, with Mixed Mode authentication. Both Windows and SQL Server authentication must be enabled.

While the PDF present on the installation package notes:

Microsoft SQL Server 2017 or newer is required, with Mixed Mode authentication. Both Windows and SQL Server authentication must be enabled.

So both versions don't match, and also, talking with EI Eng/SRE, we found out that this is not correct, EI can only be installed until "SQL Server 2019" and not further, as it is not working with "SQL Server 2022".
We also need to include a note to let users know that if they are using "Azure SQL Database" or "RDS" (to install on the cloud), they need to be aware of the limitation of SQL version, which could make it impossible at the moment.
