Although it is possible to manipulate what change history fields are indexed via public Java API: https://docs.atlassian.com/software/jira/docs/api/8.22.2/com/atlassian/jira/issue/index/IndexedChangeHistoryFieldManager.html it's not a convenient option for end user.

Please consider creating a graphical user interface or rest endpoint that would allow that.
