Is it possible to select Fix Versions of a subtask over multiple (defined) projects? We use a Core methodology and have problems implement this via Jira. We have core-issues which are planned and developed in the Core-project. After the Core-release the issues are rolled out over various projects respectively various project-versions, e.g. the rollout take place for Version A_15, B_13 and C_10 of the projects A,B and C. I would be very pleased about any suggestions.

Yes, we are planning to makesystem field more flexible in the future. For example allow to configure issue types per project and resolutions per issue type. We are also considering allowing to add versions to Project Categories. At the moment we have not scheduled any of this work, so unfortunately, I cannot provide an estimate on when this will be implemented.
