I tried to change the assignment of several issues to "unassigned" and chose this field from the list of avalable assignments in the bulk editing tool.
Actually, in the window to confirm the changes the new value was listed as "default assigne" which indeed the issues were assigned to instead of getting "unassigned".
I had to "unassign" all issues manually which worked fine - but took a lot of mouse clicks.
