There is no way to edit an undefined link once it has been created and you'd like to change the name of the page that will be created if the user clicks it. The only way to change it is to

The 'Edit' button is greyed out so you cannot Edit the link this way and changing the text of the link does only that, clicking it will still create a page containing the title of the originally entered value.
