Background
When adding a new 'Jira issues' macro to the page if the filter/JQL criteria result in a single issue the macro gets automatically replaced by a SmartLink for that single issue (as if the URL was pasted into the page), and the 'Jira Issue' macro is gone.
If a new issue matching the criteria gets created in Jira, that won't be reflected in Confluence unless you manually edit the page, remove the SmartLink, and add a new Jira Issue macro from scratch.
It's also not possible to display specific fields for a Jira Issue as the table options are not available once it becomes a SmartLink.
This behavior does not occur in the Jira Legacy macro, so it has been used as a workaround.
Suggestion
Enable the possibility of displaying Single Jira Issues in the new Jira Issue macro, as a table.
