Please test Simplified Workflows functionality to ensure that it scales for large enterprise customers. As an Admin I don't want my instance to go down or be slow because an inexperienced project admin does something unexpected.

Only administrators can create a project with simplified workflows, if you're unsure about them and unable to test them at your scale we'd recommend not using them.
