For us this is also a need-to-have feature and hopefully a fix will be available soon. 

Our working week also starts on Monday.  Like it is also organized in the source project from Jira (board settings, where you fill in you working days) So Plans and Jira are not aligned and not consistent, that cause troubles. My total planned hours per week are not equal in Jira time line and Jira-plans and I cannot explain that to my stakeholders. So hopefully this can get a higher priority. It is not the first inconsistency I encounter between Jira and Plans.

I fully support the opinions of Yoram and schimmel.f@eppendorf.de. Working also in Hamburg/Germany (but not at Eppendorf ), my stakeholders always need clarification about why we start work packages in the middle of the week—also, graying out the weekend days (or better: non-working days) for Germany, Saturday, and Sunday. Of course, Friday, Saturday, and Sunday would be great for Yoram.

Also, adding public holidays as non-working days would be great.

As I wrote in my article How to Avoid the Jira Black Hole the roadmap is a very comfortable way for continuous planning and of informing stakeholders. Therefore, it should visualize the information appropriately since it is a visual tool.

It seems to me that the default week start day is currently Sunday as true for e.g. USA, however in Europe the first day of the week is Monday. This must become configurable per plan , otherwise viewers are totally confused. It should not depend on the browser's or operation system's locale.
