Atlassian update (Feb 2023)
Hi everyone, thank you for your interest on this ticket. We’ve recently introduced the ability to re-use global custom fields in team-managed projects, which allows you to effectively use more than 50 custom fields in team-managed projects. This comes with the added benefit of being able to re-use fields across projects. Global custom fields also have a higher limit of options (note that we do not recommend having too many as it can affect performance of your Atlassian Cloud Instance). If you have a specific need to create more than 50 team-managed fields, please reach out to me at clow@atlassian.com so that I can understand your use cases better.
note: functionality of fields created in team-managed projects still remain the same and will not show up in other team-managed projects. Please feel free to reach out with any feedback on this new feature.
Regards,
Carol Low

You can't add more than 55 field options
Suggestions
Allow team-managed (formerly next-gen) projects to have more custom fields
Workaround:
Please contact Atlassian Support (through a ticket not chat), raising a technical issues and bugs request. We are happy to increase this limit for customers.
