Release definition of done, does not reflect column definition of done

It seems to me as the defenition to collect issues not done, is not working the way as stated on this site:

On this page, it is said that the defenition of done, is the mapped value on the right-most column.

If an issue has a unmapped value, the issue is also regarded as done. This creates some problem for our column mapping, where we have some unmapped columns where the issue still is not considered done. I would preffer not to create columns like 'estimated' and 'draft', which are status' we use in the workflows.
