Currently there is the shortcut to open "Assign" window and then you can start typing "unassigned" to unassign an issue. It would be nice if there was even a quicker way and more direct to prevent the case where issues are accidentally assigned to someone else if hitting enter too quickly.

Solution could be as simple as always keeping "unassigned" at the top of the list, as right now it's berried down with the users.
