A user should be able to make sub-tasks of sub-tasks and so on. Only having one level deep of sub-tasks prevents users from breaking large tasks that take a month or so into several smaller tasks which themselves take considerable effort.

This already exists as an New Feature request and has a fair amount of votes. I would suggest voting on the main issue and adding a watch on it so you can be updated on the progess.
