Currently you must edit the property jira.email.fromheader.format in the jira-application.properties file to change the email format. This should be available from through Jira's General Configuration Page.

I have updated JIRA so that the from email header can be set via the global configuration options in the admin section. Also updated the docs to reflect this change.
